4505 Meats was founded by chef and butcher, Ryan Farr, in 2009. Ryan began frying up pork rinds in his kitchen in response to waste he saw breaking down whole animals in restaurant kitchens. Ryan’s culinary knowledge and passion for whole animal utilization took on many permeations over the years, growing into farmers market stands, a butcher shop, and our flagship restaurant. Ryan also published two books, Whole Beast Butchery and Sausage Making, dedicated to sharing his craft with home cooks.

We partner with a cooperative of small family farms that raise their hogs humanely in low-stress environments and are committed to sustainable farming practices. Routine third party audits are performed to ensure all aspects of transportation, receiving, and harvesting of the animals meet animal welfare standards and that a low-stress environment is maintained.
Animals spend equal time indoor and outdoor and have access to pasture
Animals are never confined or kept in gestation crates
When inside, animals have deep straw bedding and no slat-flooring
Animals are fed a mixture of corn, soy, and minerals

Our pork rinds are simply seasoned using flavor-forward, quality ingredients. Whether it is our Classic Chili & Salt seasoned with a blend of three chilis, sea salt, and a dash of palm sugar or our Smokehouse BBQ seasoned with the same spice blend that is used on our ribs at our flagship restaurant in San Francisco, each flavor was created our kitchen to bring you no-fuss, simply delicious, pork rinds.

Our chicharrones are a secret workhorse in the kitchen. Enjoy them with your favorite dip or added to salads for a gluten free crouton. Our chicharrones are made from skin from the pig's belly and back and all the fat is fried out during the cooking process – resulting in a light, airy, and melt-in-your-mouth texture
