This Mediterranean grain was and still is a staple food prized not only for its taste but also for its nutritional value. High in protein, fiber and iron, it is very easy to digest and can be enjoyed in a number of ways. With a quick twenty minute cook time, farro can be used in soups, salads, stews or casseroles and can even be used as a substitute for brown rice. Four Cheese Farro
Alessi Four Cheese Farro begins with delicious, nutty flavored, ancient grain farro. To the farro, we add a blend of four favorite Italian cheeses including Parmesan, Romano, Asiago and Provolone resulting in a gastronomic delight.
Farro with Beets & Spinach
Alessi Farro with Beets & Spinach begins with delicious, nutty flavored, whole grain farro. To the farro, we add purplish-red, nutrient packed beets and team them with nature's dynamo vegetable, spinach.
1. Prepare farro according to package instructions. Preheat oven to 400 degrees.
2. Cut zucchini in half, lengthwise and scoop out inside pulp using a melon baller. Reserve flesh.
3. Blanch zucchini in boiling water under tender, about 5 minutes. Drain. Set aside.
Directions
4. In a bowl, mix together onion, peppers, mushrooms, garlic, salt and pepper and ½ cup of diced zucchini pulp. Saute mixture in olive oil until onions are opaque.
5. Remove from heat and stir in basil and pine nuts. Combine with cooked farro. Spoon mixture into zucchini boats and sprinkle with cheese. Place in oven for 20 minutes. Drizzle with more oil if desired.
Ingredients
1 cup cooked Alessi Medium Grain Pearled Farro
3 medium zucchini
1 small onion + 1/4 cup Alessi Roasted Red Peppers + 1/2 cup white buttom mushrooms, (all chopped)
2. Place a serving of farro on a bed of fresh baby spinach. Season with olive oil and a drizzle of balsamic vinegar (or balsamic reduction). Sprinkle with crumbled feta cheese.
Variation: Add cooked shrimp and chopped pistachios over salad.
