Each one of our chips starts with potatoes, oil, salt and the good vibes of the Cape. Select potatoes are sliced thick and cooked at a precise temperature in custom kettles one small batch at a time.	Cape Cod Potato Chips began when two small business owners came together to sell their homemade potato chips and opened a small store front in Hyannis, Massachusetts on July 4, 1980.	What started as a local favorite is now a top tourist destination with 250,000 annual visitors. In a large bowl using a hand mixer or stand mixer, beat cream cheese, sour cream and ranch dressing mix until creamy and combined.
By hand stir in cheese, bacon and chives.
Add salt and pepper to taste.
