KNOW YOUR CHOCOLATE
Knowing the difference between your chocolate is very important. There are two different types of chocolate - compound and couverture. The differences between them are very important to know while eating or cooking.
The two major constituents of chocolate, that are responsible for its flavor and quality - chocolate liquor and cocoa butter. These two ingredients determine the chocolate’s taste and worth. The superior the nature of chocolate liquor and cocoa butter, the finer the chocolate tastes.
In a chocolate compound, the chocolate liquor is replaced with cocoa powder and cocoa butter with vegetable oil. As compared to couverture chocolate, the compound is not ‘real chocolate’.
Couverture chocolate is glossier in appearance, melts readily in the mouth, and has a snap.
