Chicory root is a hardy perennial best known for its association with coffee, producing a similar roasted beverage with no caffeine. A larger relative of the dandelion, chicory was in cultivation for thousands of years along the Nile River in Egypt, then spread to America in the 18th century.

RECIPE: CHICORY ROOT MAPLE AND ALMOND MILK LATTE
Directions
- Brew roasted chicory root granules in boiling water for 3-5 minutes.
- Meanwhile, bring almond milk to a simmer in a small saucepan. Dissolve maple syrup granules in almond milk.
- Strain chicory root brew into the almond milk. Stir and pour into two 8-ounce cups.
