4 whole eggs, ¼ cup Pure Maple Syrup, 5oz cottage cheese or dairy free cottage cheese (if no cottage cheese, use 5oz very ripe bananas)
¼ cup any sugar or sweetener -Optional, 1 tsp Pure Vanilla Extract, 1 tsp Baking Powder, ¼ tsp Sea Salt
Instructions:
In medium bowl -mix all wet ingredients together
In medium bowl –mix all the dry ingredients well
Combine wet and dry mixes by gradually whisking in the dry ingredients until lump free. Tip –can use a blender especially if using bananas instead of cottage cheese
Heat up non-stick skillet, use oil, butter or non-stick spray. Cook on skillet until golden brown on both sides. Serve and enjoy with your fav toppings and syrup
Tigernut Milk
Ingredients:
1 cup Iya Foods Tigernut flour
1 tsp pure vanilla extract, ½ tsp cinnamon
1 tbsp honey –optional, 4 cups of hot water, A medium sized airtight container (can hold about 32oz), A good blender like Vitamix, A strainer such as a nut milk bag
Instructions
Add hot water to Tigernut flour in a clean clean medium sized pot. Allow to cool
Store in the refrigerator for 24 hours
Blend in Vitamix or your blender till smooth
Strain using nut milk bag into airtight container., Enjoy or store for up to 7 days in your refrigerator
Tigernut Breakfast Porridge
Ingredients (4 Servings):
1 cup Iya Food Tigernut flour
2 cups steel cut oatmeal
½ cup quinoa – optional but so good!
½ tsp salt, 1 tsp honey
Instructions:
Mix all ingredients in a pot (Tip can use instant pot too)
Steam cook for 20-30 mins minutes
Serve hot with preferred milk & toppings
Keep in the fridge for up to a week. Freeze in freezer-safe containers for longer storage.
