BEETROOT TAHINI DIP

2 large beetroot, peeled, diced and roasted 2 tbs tahini 2 tbs olive oil 1 tbs apple cider vinegar 1 tsp cumin ¼ tsp sea salt freshly ground pepper Garnish: Pepita seeds Sesame seeds 1. Roast the beetroot in a preheated oven at 180C fan forced for 20 minutes. Allow to completely cool. 2. Combine all ingredients in a food processor and blend until smooth. 3. Garnish with pepita seeds and sesame seeds and serve with Buckwheat Wafer Crackers.
