This seasonal, and classic French Swiss cow’s milk cheese is a very special treat. It is traditionally used as a whole wheel, and placed onto a girolle, which allows the whole piece to be shaved into curls – like a Monk’s Head (the translation of the name)! It is semi-firm texture with a lovely creamy and slightly tangy taste.
