What about the new Chinese ones do you feel isnt at the same quality level?

Thinner stainless, likely a lower grade or poorly alloyed stainless, and not charcoal filled liners anymore. Also, poor quality control and checks (at least this used to be the case. I can’t speak to the newer ones).
