You’ll want 18/10 3-ply stainless (5 and 7 ply cost too much and take too long to head up, not worth the added cost IMO.)

Check out Demeyere, American Kitchen, All-Clad.

Depending on how big of a soup pot and large pan you want, you may be better off at a restaurant supply store for those.
