My license expired Thursday. I have since renewed it online, would my license scan at a sheetz or whatnot without having to show them the temporary paper?

It won’t scan and from my experience you’re at the will of the employee/manager/store if they accept accept expired card, with renewed paper.

Not just the birth date, also the expiration date. It's quicker to just scan it if possible.

Its unlawful for them to refuse the renewal paper.
All they have to do is enter the DL manually and it will show the DL as valid. An expired card simply wont scan. You do have to have and present the expired DL and the renewal paper. Just having one or the other isn't acceptable.
They know this. If they refuse they are playing prick games. Also the printed temp renewal paper has a QR or scan bar on it that should work as well.
If they do not serve you report the store and move on to another store.
