Curry fan here. Looks great. My brother goes the extra mile over my abilities and makes his own assorted curry pastes using a mortar and pestle and fresh curry paste ingredients lol

What a guy! It’s so rewarding making your own paste, I do this when I make rendang but for this recipe have found a store bought paste that is an actual Thai brand and tastes delicious so I stick with that.

Try the Maesri brand curry pastes and noodle sauces. I get mine from a fantastic little oriental shop in Portland Maine but have also seen them on Amazon. Inexpensive and super tasty!
