Thank you. It is King aka Chinook salmon. My most favorite in all types of wild salmon due to its delicate sweet, very rich and the melt-in-your-mouth taste.

I didn't know salmon could be eating raw because of worms. I thought it had to be at least cured somehow with some sake or something.

I think the salmon has been caught fresh, bled, and gutted upon capture, then immediately frozen in ice, which kills any harmful parasites; thus, making it safe for raw consumption.
