Tap water. Not sure what caused this.

The ice cube freezes from the outside in, and water also expands as it freezes, so it has nowhere to go but up.

Makes sense but why does this not occur every time then? What changed to allow this to happen this time?

Just looked it up; so it appears that it has to do with how ice molecules crystallise, air temptation, and the rate of cooling: the spikes form at 60 degree angles and it optimally requires about -7 degrees Celsius. If not it can freeze in more of a “sheet like” pattern which rapidly covers the surface.

Interesting... So in other words, "shit happens sometimes".

Essentially: cold enough to freeze, but not so cold as to freeze the surface entirely first.
