This is most like a case of this. If authorities got into the phone of any participant in that group chat they could read it.
That the thing with all these apps, they're very user friendly for the user of the phone - just open the app and everything is available (unless you have a separate code in the app - typically opt-in).

I have my convos set to disappear after an hour, but I still get nervous about it. I just assume anything I type on a phone/computer can be found.

That doesn't matter at all from a systematical perspective.
It could be your plans to topple the genocidal dictator, it could be your drug trafficking business, it could be your vacation photos you don't want a phone repairman getting access to.
Shaming people for wanting privacy is not cool.
