We've always had good luck with the Superstore in Williston.
We had good luck at the mattress store in the Staples plaza near UVM. YMMV
I got mine from the "Natural Matress Company" as his store is the only one that sells mattresses without that nasty foam interior. It was a smooth and easy transaction. The natural mattress' even come in a box so it's easy to move and bring home

Wife and I got the 12" Casper Hybrid last year and have been really happy with it.
We tried different models out at Vermont Mattress and Bedroom and figured out what we would probably like. The mattress from Costco was about 30% cheaper though
Burlington furniture company on pine st in Burlington has a decent selection of mattresses.

Ditto & while I went for a more minimal model there are definitely some with springs and natural foam (from rubber tree sap spun up like marshmallow fluff, it's pretty nifty) that are very much like a traditional mattress OP might be looking for, just without the off-gassing.
Burlington Bedrooms on South Shelburne Rd has a big inventory with some inexpensive options. Otherwise Costco wins it for convenience.
Made here in Vermont by a family owned company. The mattress are not inexpensive, and I am not a salesman, but I have never had better sleep in my life, not to mention I no longer have any back pain! Invest in the best nights sleep you can imagine, it’s worth it.
