And Russia is forcing them. But to be honest, Ukraine's forces have quite a lot of older volunteers too, but the difference is they volunteered willingly and many of them vets from the now long conflict.

Those old Ukrainian vets aren't being used as cannon fodder but in training roles or leadership positions. And quite often those that aren't allowed to join are instead joining the local territorial defense. Got to remember Ukraine stop mobilization not because of the lack of manpower but the lack of training and equipment for them. In addition the shrinking front line mean they didn't want to pack more people in and make them easier targets. Russia doesn't care about any of those factors.

Weren't men under 60 prevented from leaving ukraine? Are we sure they're all volunteers?

Yes, that was in case of the need for future mobilizations. Unlike Russia, it's quite easy to fact check because Ukraine welcomes tonnes of international corps. Not sure what you are getting at.
