Same reason like vanilla. Or chocolate Or cold drinks. Or hot drinks. Or lots of popular flavors. Sometimes "because people like it" is the only real answer.

There's no reason that couldn't be glued and clamped. I would use a c clamp and a chunk of something like 2x4 at least 6-12 inches long to help spread the force out and "straighten" the area

It doesn't necessarily have to be "more complex or difficult". It just has to be different. You have to "learn to like" different (and a lot of people do), but the familiar is easy and often comforting.
