I know the photo is supposed to be top-down but it feels like it's over jusssst a little too much and everything's gone upside-down.
Still, looks good! Don't think I've ever had a steak & egg bagel but throw some hot sauce in there and I'd be all over that.

I’m all about “weird” toppings on pizza these days. Pizza Express do one with courgette and it’s superb. This looks pretty damn good!
Edit: did you precook the eggplant or was the oven time enough to cook it satisfactory?

Thanks! Plating and presentation is always my downfall so I know I have work to do to make it look like a proper French omelette, but I was happy with how it tasted for sure

Too much filling to be able to get the fold right, and I’m not happy with the curds I achieved. Happy with the (lack of) colour though, and level the eggs were cooked to

You were so preoccupied with whether or not you could, you never stopped to think whether or not you should.
(Spoiler: you absolutely should. That looks amazing if a bit/lot messy - especially with that flaky-ass croissant! But I'd go to town on one of those for sure)
